D’s Cowboy Beans Recipe
250g Pinto or Black Beans
1000g water
2 tablespoons oil/fat/lard
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon cilantro
1 packet Sazon Goya con culantra y achiote
1 teaspoon garlic powder
¼ teaspoon turmeric
½ teaspoon ginger
A couple dashes of Goya Adobo seasoning
1 bay leaf
½ big onion
1 jalapeno
1 teaspoon paprika
1 cube bouillon (beef but any will do)
Instant Pot:
Add all to instant pot and cook for 66 minutes with a complete natural release
Stove top:
For stove top add another 1000g of water (total 2000g of water)
Add only the beans to water, bring to a boil, then simmer with top slightly open for 1.5 hours.
After 1.5 hours, stir in the rest of the ingredients and let simmer for another hour to 1.5 hours or until beans are soft.
Keep an eye on the water level after 1.5 hours. The beans should be completely covered with water throughout the cooking process. Stir occasionally.
Serves 4 to 5
